Notes

Step-by-Step Instructions

✅ Step 1: Mix the Ingredients

  1. In a large bowl, add the ground meat.
  2. Sprinkle salt, pepper, sage, thyme, red pepper flakes, and brown sugar on top.
  3. Add minced garlic and onion if using.
  4. Gently mix everything using clean hands or a spoon. Don’t overmix.
👉 Tip: Mix just until combined—overmixing can make the patties tough.

✅ Step 2: Taste Test (Optional)

  1. Scoop a small spoonful of the mixture.
  2. Flatten and cook it in a pan for 1–2 minutes.
  3. Taste and adjust the seasoning if needed.

✅ Step 3: Shape the Patties

  1. Divide the meat into 8 to 10 equal parts.
  2. Roll each into a ball, then flatten into a ½-inch patty.
  3. Press your thumb in the center to help them cook evenly.
👉 Tip: Wet your hands with water or oil to prevent sticking.

✅ Step 4: Cook the Patties

  1. Heat a skillet over medium heat. Add a little oil if using lean meat.
  2. Add the patties, spacing them out.
  3. Cook 4–5 minutes per side, flipping once, until browned and cooked through.
👉 Internal Temp: 160°F (71°C) for pork. No pink inside.

✅ Step 5: Drain and Rest

  1. Transfer patties to a plate lined with paper towels.
  2. Let rest 2–3 minutes before serving.
