Notes

Step-by-Step Instructions:

Step 1: Prepare the Sausage Mixture

In a large mixing bowl, combine the ground turkey, sage, thyme, garlic powder, onion powder, salt, and black pepper. If you're using maple syrup, add it to the mixture. Add the egg if you're using it for binding. Mix everything together thoroughly using your hands or a spoon, making sure the spices are evenly distributed. Be careful not to overmix, as this can make the sausage tough.

Step 2: Shape the Sausage Patties

Once your mixture is well-combined, take small portions of the mixture and form them into patties. You can shape them to your preferred size, but generally, aim for patties about 2-3 inches in diameter. If you prefer sausage links, you can roll the mixture into small cylindrical shapes instead.

Step 3: Cook the Sausage

Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, place the sausage patties in the skillet, being careful not to overcrowd the pan. Cook each side for about 4-5 minutes, or until the patties are golden brown and cooked through (internal temperature should reach 165°F/75°C). If you’re using links, make sure to cook them thoroughly on all sides.

Step 4: Rest and Serve

Once the turkey sausage is cooked, remove the patties from the skillet and place them on a plate lined with paper towels to drain excess grease. Let them rest for 5 minutes before serving. This helps the juices settle inside the sausage for a juicy bite.
