Ingredients

  • Ingredients
  • Here’s everything you’ll need:
  • 1 pound steak ribeye, sirloin, or New York strip
  • 4 large eggs
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Garlic powder optional, for extra flavor
  • Fresh herbs optional, like parsley or chives for garnish
  • Ingredient Notes:
  • Steak: Choose a tender cut for the best results. Ribeye is juicy and flavorful but sirloin is more budget-friendly.
  • Eggs: Large free-range eggs give a richer flavor.
  • Butter + Olive Oil: Using both gives a crispy edge without burning the butter.
  • Seasonings: Keep it simple! Let the natural flavors shine.
  • Optional Extras: Add hot sauce avocado, or sautéed mushrooms for extra flair.

Step-by-Step Instructions

1. Prepare the Steak

  • Take the steak out of the fridge 30 minutes before cooking to bring it to room temperature.
  • Pat it dry with paper towels.
  • Season both sides generously with salt, pepper, and a little garlic powder (if using).

2. Cook the Steak

  • Heat a large skillet or cast-iron pan over medium-high heat.
  • Add 1 tablespoon olive oil and 1 tablespoon butter.
  • When the butter foams, place the steak in the pan.
  • Cook 3–4 minutes on the first side (for medium-rare), without moving it.
  • Flip and cook the other side for another 3–4 minutes.
  • Adjust the time based on your preferred doneness:
    • Rare: 120°F
    • Medium-Rare: 130°F
    • Medium: 140°F
    • Well-Done: 160°F
  • Remove the steak and let it rest for 5 minutes.
Tip: Always let steak rest before slicing — it keeps the juices inside!

3. Cook the Eggs

  • In the same pan (with steak juices for extra flavor), add 1 tablespoon butter.
  • Crack the eggs into the pan.
  • Cook them sunny-side up for about 2–3 minutes, or flip for over-easy eggs.
  • Season lightly with salt and pepper.

4. Assemble

  • Place the steak on a plate.
  • Top or side it with your cooked eggs.
  • Garnish with chopped fresh herbs if you like.
  • Serve immediately.
