Ingredients
  

  • 14 oz fresh Hokkien noodles or thick egg noodles
  • 2 tablespoons vegetable oil or peanut oil for more flavor
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1 small onion sliced thin
  • 1 cup shredded cabbage
  • 1/2 cup carrots julienned
  • 1/2 cup bean sprouts
  • 2 green onions chopped
  • 🍗 Protein choose one:
  • 1 cup cooked chicken breast thinly sliced
  • OR
  • 1 cup shrimp peeled and deveined
  • OR
  • 1 cup firm tofu cubed and pan-fried
  • 🍜 For the Sauce:
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce for color and richness
  • 1 tablespoon oyster sauce or vegetarian oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 cup water

👨‍🍳 STEP-BY-STEP INSTRUCTIONS:

Step 1: Prep the Noodles

  • If using fresh Hokkien noodles, soak them in warm water for 2–3 minutes to loosen them up.
  • Drain and set aside.

Step 2: Make the Sauce

  • In a small bowl, mix together soy sauce, dark soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and water.
  • Stir well and set aside.

Step 3: Stir-Fry the Veggies & Protein

  • Heat vegetable oil in a large wok or pan over medium-high heat.
  • Add garlic and ginger. Sauté for 30 seconds.
  • Add onion, cabbage, carrots, and your choice of protein (chicken, shrimp, or tofu).
  • Stir-fry for 3–5 minutes until the veggies are tender and the protein is heated through.

Step 4: Add Noodles & Sauce

  • Add the pre-soaked Hokkien noodles to the wok.
  • Pour the sauce over the top.
  • Toss everything together until the noodles are evenly coated and heated through—about 2–3 minutes.

Step 5: Finish & Garnish

  • Toss in bean sprouts and chopped green onions.
  • Stir-fry for 1 more minute.
  • Serve hot with a sprinkle of sesame seeds or a squeeze of lime (optional).
