Step 1: Cook the Noodles

Bring a pot of water to a boil. Add noodles and cook according to package instructions. Drain and rinse with cold water to stop cooking. Set aside.
 
💡 Tip: If using ramen noodles, skip boiling and add directly to the soup later.

Step 2: Sauté Aromatics

In a large pot or Dutch oven, heat 1 tbsp sesame oil over medium heat. Add minced garlic and grated ginger , and sauté for 1–2 minutes until fragrant.
 

Step 3: Add Broth & Simmer

Pour in chicken or vegetable broth , and bring to a gentle simmer.
 

Step 4: Add Vegetables & Protein

Add carrots, mushrooms, bok choy stems (save leaves for later), and chicken or tofu . Stir well and let cook for 5–7 minutes until vegetables soften and chicken is cooked through.
 
Add bok choy leaves and green onions , and stir in soy sauce (and any optional add-ins like chili paste or coconut milk). Simmer 2–3 more minutes.
 

Step 5: Add Noodles & Serve

Stir in the cooked noodles. Heat through for 1–2 minutes.
